How Kazookaa is made: from raw cashew nut to your jar.
Most dry fruit brands buy finished kernels and repack them. We started in 2018 by processing raw cashew nuts ourselves, and we still grade, roast, flavour and pack everything under one roof. Here is what happens before a pack reaches you.

Nine steps from shell to kernel
A cashew grows inside a hard, caustic shell, so every kernel has to be opened, dried and peeled before it can be eaten.
- Raw nut checkEvery lot of raw cashew nuts is checked for moisture, nut count and kernel outturn before we accept it.
- Drying & storageNuts are sun-dried to safe moisture and stored in dry, ventilated godowns until processing.
- Size gradingRaw nuts are graded by size so that each batch cooks and cuts evenly.
- Steam conditioningA short steam cook softens the hard shell so it can be opened without breaking the kernel.
- ShellingEach nut is cut open and the kernel lifted out of its shell.
- Kernel dryingKernels are dried in hot-air dryers, which loosens the thin brown skin (testa).
- PeelingThe skin is removed by hand. This careful work keeps kernels whole and white.
- GradingKernels are sorted by size, colour and wholeness into grades like W240, W320, splits and pieces.
- PackingGraded kernels are packed in sealed pouches, jars, or vacuum packs for bulk buyers.

How a plain cashew becomes Peri Peri
Since 2019 we have developed 11 cashew and 9 almond flavours in-house, from Salted and Cheese to Mitha Paan, Habanero and Phalahari.
- SelectWhole kernels of a single grade, so every piece roasts the same.
- RoastRoasted in small batches for crunch and colour.
- SeasonCoated with our own seasoning blend while still warm.
- Cool & sealCooled, checked and sealed in jars to keep the crunch.

Common questions
Does Kazookaa process its own cashews?
Yes. Kazookaa began processing raw cashew nuts in 2018 at its own unit in Birkoni Industrial Area, Mahasamund, Chhattisgarh, where kernels are also graded, roasted, flavoured and packed.
Why are cashews never sold in the shell?
The cashew shell contains a caustic liquid that irritates skin, so the nut has to be steam-conditioned, cut open, dried and peeled before the kernel is safe and pleasant to eat.
How are Kazookaa flavoured cashews made?
Whole kernels of one grade are roasted in small batches, coated with our own seasoning blend while warm, cooled and sealed in jars.
How long do Kazookaa dry fruits stay fresh?
Our packs carry a best-before of 6 months from packing. Store them in a cool, dry place and refrigerate after opening.
Do you add anything to your nut butters?
No. Kazookaa cashew and almond butters are made from 100% nuts, with no added sugar, oil, salt or preservatives.
